Coronation Jackfruit

I don’t want to be known as She Who Ruins Every Dinner. So, when I do do (do do, hur hur) something well, I want you to know about it. Recently I’ve had a few culinary successes and these must be celebrated.

Remember Coronation Chicken? I don’t miss chicken (I do miss chickens, the sentient beings who roamed free in our garden) but I have been craving ‘coronation chicken’ or rather just ‘coronation’. I missed the creamy, fresh, mild curry, the sultanas, the mango, the sweetness. 

So I googled ideas and found The Accidental Chef coronation jackfruit and chickpea recipe which is PERFECT and EASY. Do head to the original recipe page for a proper recipe, ingredients list, instructions and even the history of Coronation Chicken.

I’ve made this several times now and all my lucky consumers praise it. Quick headcount… we’re talking four people. Four people, 100% of whom praised it. That’s good stats for me - I’m used to comments like ‘is this food?’ and ‘can I use the leftovers to plaster the walls?’ - said after I made a particuarly sticky and gritty polenta slop.

Back to Coronation Jackfruit. The OG recipe calls for baking only the chickpeas for ten minutes, but I bake the jackfruit with the chickpea-curry powder mix, because I’m sure jackfruit tastes better cooked.

I’ve served this in wraps and with Rebel Recipes freshly baked soda bread. It’s a winner every time. It tastes even better the next day.

Ingredients

1 can chickpeas, 1 can jackfruit, 1tsp curry powder.

3tbsp vegan mayo, 2tbsp vegan Greek style yoghurt, 2tbsp curry powder, 1tbsp mango chutney, 1/2tsp cinnamon, 50g sultanas.

I add cashew nuts or sliced almonds, dry fried, for looks and crunch. Look at me, adding to recipes like a sally show-off!

Instructions

Preheat oven to 220 degrees. Drain and rinse the chickpeas and jackfruit - use your fingers to shread the jackfruit. Toss both in a teaspoon of curry powder and cook for ten minutes.

Stir all the sauce ingredients together.

Mix the chickpea jackfruit combo with the sauce. Has there ever been a more simple recipe? You’re done, it’s lush, people will ask you for the recipe and tell you stories about Coronation Chicken back in the day while you tell them how great jackfruit is.
